{Double Chocolate Muffins} – Muffins cu ciocolata

After a fancy dessert like Religieuse, it was a must to make a simple, basic one and the first thing to come through my mind was chocolate – I always go back to it when in need of comforting desserts – but this time I put it in some muffins and moreover, I doubled the dose. Was that enough?! Obviously not and for a second I was tempted to turn these decadent double chocolate muffins into decadent cupcakes by topping them with a silky frosting, but then I thought that simplicity should prevale this time. And to be fair I wasn’t sorry for leaving them as simple as they are just because the double dose of chocolate is enough to turn them into amazing tiny treats – do add a cup of milk or a mug of warm tea next to them.. or why not your morning coffee.. and you’re set to have a lovely treat at any time of the day!

The recipe asks for coffee pwoder, but it’s not compulsory. I skipped adding it as my 5-year old likes to snack on these, but adding a touch of coffee really boosts the chocolate flavor so go ahead. Moreover, add a few white chocolate chips or some chopped nuts – see how easy it is to customize recipes?!

  • 280g all-purpose flour
  • 50g cocoa powder
  • 1½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 eggs
  • 180g white sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon instant coffee powder (optional)
  • 85ml vegetable oil (like canola or sun-flower)
  • 260ml milk
  • 100g dark chocolate chips
  1. Pre-heat your oven to 350F - 180C and line your muffin tin with muffin papers.
  2. Sift the flour, cocoa powder, baking powder, baking soda and salt in a bowl.
  3. In a different bowl, mix the eggs and sugar with an electric mixer until double in volume and pale.
  4. Stir in the vegetable oil, vanilla, coffee powder and milk and mix well.
  5. Add the flour mixture and mix just until incorporated.
  6. Using a spatula, fold in the chocolate chips.
  7. Pour the batter in your muffin tin, filling each muffin paper ¾ - these muffins tend to rise quite a lot.
  8. Bake for 15-20 minutes until a toothpick inserted in the center of one muffin comes out clean.

Reteta in sine e cat se poate de simpla si o ador pentru ca uitati si voi cat de crescute sunt briosele astea! Si ce pufoase si aromate sunt, mai ales daca adaugati si cafeaua instant ce are rolul de a intensifica toate celelalte arome.


  • 280g faina alba
  • 50g cacao
  • 1 1/2 lingurita praf de copt
  • 1/2 lingurita bicarbonat de sodiu
  • 1/4 lingurita sare
  • 2 oua
  • 180g zahar
  • 1 lingurita extract de vanilie
  • 1 lingurita cafea instant (optional)
  • 85ml ulei vegetal
  • 260ml lapte
  • 100g fulgi de ciocolata neagra

Mod de preparare:

  1. Preincalziti cuptorul la 180C si tapetati o tava de muffins cu hartii speciale de muffins. Daca nu aveti in casa, nu-i bai, le puteti face ca aici.
  2. Cerneti faina, cacaoa, praful de copt, bicarbonatul si sarea intr-un bol.
  3. In alt bol, mixati ouale cu zaharul pana isi dubleaza volumul si se deschid la culoare.
  4. Adaugati uleiul, vanilia, cafeaua si laptele si mixati bine.
  5. Incorporati faina apoi adaugati fulgii de ciocolata, incorporandu-i cu o spatula.
  6. Turnati aluatul in hartiutele de muffins, umplandu-le 3/4 caci briosele astea tind sa creasca foarte mult.
  7. Coaceti pentru 15-20 minute pana trece testul scobitorii.

{Streusel Apple Muffins} – Muffins cu mere si topping crocant

I enjoy this time of the year – apples, pears, grapes and plenty of vegetables are such a great view at the market. But there’s two particular kind of fruits that I love from all of that: ripe, juicy pears and green apples. They both taste amazing and I use plenty of them in my baking these days.

These streusel apple muffins are the perfect example of a sweet treat that incorporates some of the most amazing autumn flavors – apples, cinnamon and butter – I find them all to be part of this season together with pears, pumpkin and figs. What I particularly like about this recipe is the contrast between the fluffy and moist inside and crunchy, fragrant topping. Biting into one muffin is a one-of-a-kind experience, that’s for sure! You will love the tender, juicy apples inside and the fluffy, buttery sponge surrounding them. The topping is like the cherry on top and it adds just the amount of cinnamon these muffins need to become an amazing dessert!

  • 225g all-purpose flour
  • 1 pinch salt
  • 1 teaspoon baking powder
  • 110g sugar
  • 125g butter, melted
  • 2 eggs
  • 100ml milk
  • ½ teaspoon vanilla extract
  • 2 small green apples, diced
  • 40g butter
  • 80g all-purpose flour
  • 20g powdered sugar
  • ½ teaspoon cinnamon powder
  1. Preheat your oven to 350F (175C).
  2. Line your muffin tin with muffin papers.
  3. To make the muffins, combine the flour, salt, baking powder, sugar, butter, eggs, milk and vanilla in a food processor and pulse until smooth.
  4. Fold in the diced apples then spoon the batter into 12 muffins cups.
  5. To make the streusel, mix all the ingredients in a bowl and rub the mixture well between your fingertips until sandy.
  6. Top each muffin with streusel and bake for 20-25 minutes until well risen and golden brown.
  7. Let them cool in the pan before serving.
To make sure the muffin papers aren't greasy after baking, add rice at the bottom of each muffin cup, like you see in the pictures above!


Perioada asta a anului abunda in fructe si legume, dar preferatele mele sunt de departe perele si merele acelea tinere, crude, inca acrisoare, zemoase si asa de buuuune! Incerc sa folosesc aceste doua minunatii in retetele mele cat mai mult in aceasta perioada, asa ca iata o reteta de muffin cu mere zemoase si un topping aromat, crocant. E un contrast delicios intre interiorul pufos, aerat si topping crocantul!



  • 225g faina alba cernuta
  • 1 praf de sare
  • 1 lingurita praf de copt
  • 110g zahar
  • 125g unt topit
  • 2 oua
  • 100ml lapte
  • 1/2 lingurita extract de vanilie
  • 2 mere verzi, taiate cuburi


  • 40g unt rece
  • 80g faina alba
  • 20g zahar pudra
  • 1/2 lingurita scortisoara

Mod de preparare:

  1. Pentru muffins, combinati faina, sarea, praful de copt, zaharul, until, ouale, laptele si vanilia in vasul robotului de bucatarie.
  2. Mixati pana obtineti un aluat omogen apoi incorporati merele taiate cuburi.
  3. Turnati aluatul in 12 forme de muffins si dati deoparte.
  4. Pentru streusel, combinati toate ingredientele intr-un bol si amestecati cu varfurile degetelor pana obtineti un amestec nisipos.
  5. Acoperiti fiecare muffins cu streusel si coaceti 20-25 minute pana cresc frumos si devin aurii.
  6. Lasati-le sa se raceasca in tava inainte de a servi.


Pentru a absorbi surplusul de grasime care adeseori pateaza hartiile de muffins, puneti putin orez pe fundul fiecarei forme de muffins, precum in imaginea de mai sus.

Chocolate and cherries come together into these moist, fragrant, loaded-with-chocolate cupcakes! Not only they taste great, but they also look stunning with that dollop of whipped cream on top and a cherry as decoration, don’t you agree?! They were a huge hit with my people and we fought on the last one! I personally loved biting into it and discovering pieces of cherries melting in my mouth with the tender, delicious sponge to accompany them. However, I picture the same batter made simple or with other fruits instead of cherries since they are out of season more or less… unless you have some frozen cherries, like I do. I like to freeze summer fruits for later use and at the moment I have berries, cherries and sour cherries in the freezer. They keep well for winter and taste just as good as the fresh ones and this way I get to make Black Forest Cupcakes even in January!

Moist and rich, these Black Forest cupcakes are little gems of deliciousness!

  • 115g butter, cubed
  • 100g dark chocolate, chopped
  • 1 egg
  • 100ml plain yogurt
  • 150ml milk
  • 1 teaspoon vanilla extract
  • 200g sugar
  • 280g all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 pinch salt
  • 200g pitted dark cherries
  • 300ml heavy cream, chilled
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract
  1. To make the cupcakes, combine the butter and chocolate in a heat-proof bowl and melt them together over a water bath or in the microwave.
  2. Allow the chocolate mixture to come to room temperature then stir in the egg, yogurt, milk and vanilla.
  3. Stir in the sugar then add the flour, baking soda and salt and give it a good mix.
  4. Fill 12 muffin cups with batter half way then place the cherries in each muffin cup and top with the remaining batter.
  5. Bake in the preheated oven at 180C for 20-25 minutes or until well risen.
  6. Remove from the oven and let them cool down in the pan.
  1. For the frosting, combine the heavy cream with the powdered sugar and whip with an electric mixer until fluffy and stiff.
  2. Fold in the vanilla extract then spoon the whipped cream into a pastry bag and pipe it on top of each cupcake.
  3. Decorate with dark cherries and chocolate flakes if you want.
Feel free to skip or replace the cherries with other fruits or even nuts/chocolate chips.

Cu toate ca sezonul cireselor e terminat, inca mai puteti face aceste cupcakes daca aveti cirese congelate. Si chiar daca nu aveti, puteti inlocui ciresele cu alte fructe sau chiar cu bucati de ciocolata. Sigur, nu vor mai fi Padurea Neagra, insa vor fi delicioase caci blatul in sine este delicious, umed, aromat.



  • 115g unt, taiat cuburi
  • 100g ciocolata, tocata
  • 200g zahar
  • 1 ou
  • 100ml iaurt
  • 150ml lapte
  • 1 lingurita extract de vanilie
  • 280g faina alba
  • 1 praf de sare
  • 1 1/2 lingurita bicarbonat
  • 200g cirese fara samburi


  • 300ml frisca lichida
  • 2 linguri zahar pudra
  • 1 lingurita extract de vanilie
  • Ciocolata si cirese pentru decor

Mod de preparare:

  1. Combinati untul si ciocolata intr-un bol si puneti bolul pe baie de aburi pana ciocolata si untul sunt topite si omogenizate.
  2. Luati bolul de pe vasul cu aburi si lasati sa se racoreasca cateva minute apoi adaugati zaharul, oul, iaurtul, laptele si vanilia si mixati bine.
  3. Incorporati faina, searea si bicarbonatul si mixati pana la incorporare.
  4. Umpleti formele de cupcakes (tapetate cu hartiute de muffins/cupcakes) pe un sfert, apoi asezati cateva cirese in fiecare forma si acoperiti cu aluat pana formele sunt umplute 3/4.
  5. Coaceti in cuptorul preincalzit la 180C pana cresc frumos si trec testul scobitorii.
  6. Lasati-le sa se raceasca in forma.
  7. Pentru glazura, mixati frisca cu zaharul pana sta bat apoi adaugati vanilia. Transferati frisca intr-un pos si decorati cupcakes-urile.
  8. Decorati cu o cireasa ci ciocolata rasa.

{Vanilla Blueberry Muffins} – Muffins cu afine

One thing I love about these blueberry muffins – they are incredibly easy to make and the ingredients are always on hand. The blueberries are not even compulsory and you can easily replace them with other fruits, such as plums, strawberries, raspberries, apricots or even chocolate chips. It’s a versatile recipe and it always yields great results. It is my “go to” recipe each and every time I need a quick dessert fix.


  • 110ml vegetable oil
  • 150g sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 170g all-purpose flour
  • 35g cornstarch
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 180g sour cream
  • 100g fresh or frozen blueberries


  1. In a bowl, mix the oil with the sugar then stir in the eggs. Mix with an electric mixer until the mixture triples its volume then stir in the vanilla.
  2. Add the flour, cornstarch, baking powder and salt and mix well.
  3. Incorporate the sour cream and mix well.
  4. Fold in the blueberries then spoon the batter into 12 muffin cups lined with muffin papers.
  5. Bake in the preheated oven at 350F (180C) for 20-25 minutes or until well risen and golden brown.
  6. Allow them to cool in the pan before serving.

Aceasta este reteta de muffins la care ma intorc mereu cand vreau ceva rapid si cu ingrediente la indemana. In plus, ador acest aluat cu smantana pentru ca se pastreaza bine dupa copt, briosele nu se usuca si au gust bun chiar si dupa cateva zile.

Am folosit afine de aceasta data, dar le puteti inlocui cu alte fructe, precum zmeura, capsune, prunce, piersici, caise sau chiar fulgi de ciocolata. E o reteta versatila care iese garantat!


  • 110ml ulei vegetabl
  • 150g zahar
  • 2 oua
  • 1 lingurita extract de vanilie
  • 170g faina alba, cernuta
  • 35g amidon de porumb
  • 1 1/2 lingurite praf de copt
  • 1 praf de sare
  • 180g smantana acra
  • 100g afine proaspete sau congelate

Mod de preparare:

  1. Amestecati zaharul cu uleiul, apoi adaugati ouale. Mixati pana isi tripleaza volumul.
  2. Adaugati vanilia apoi incorporati faina, amidonul, praful de copt si sarea si mixati bine.
  3. Incorporati smantana, apoi adaugati afinele si amestecati usor pentru a nu le rupe in bucati.
  4. Folosing o lingura, turnati aluatul in 12 cupe de muffins. In functie de marimea acestora, s-ar putea sa aveti nevoie de 14-16 cupe, depinde insa si cat de mult le umpleti. Recomand 3/4.
  5. Coaceti la 170C pentru 20-25 minute sau pana sunt crescute frumos si devin aurii.
  6. Lasati-le sa se raceasca in tava inainte de a le servi.

{Chocolate Banana Muffins} – Muffins cu banane si ciocolata

I’m not a huge fan of muffins, but these chocolate banana muffins are amazing… so moist and loaded with flavor! The banana taste complements perfectly the chocolate’s delicate bitterness and mellows it down. It’s a very moist batter, unlike other muffins I’ve made or tried before. This recipe is definitely a keeper and it has found a place in my recipe notebook!

I recommend using good quality ingredients for these chocolate banana muffins. The chocolate makes a huge difference and the dark kind yields some dark, delicious muffins with an intense chocolate taste, well balanced by the delicate banana taste and fragrance. It’s a recipe that has found its place in my all time favorite recipe folder not only due to all the reasons stated above, but also because these muffins can easily turn into the best cupcakes you’ve ever had. A chocolate whipped ganache would make an excellent match for these, although buttercream or whipped cream are not to be avoided either.

{Chocolate Banana Muffins} – Muffins cu banane si ciocolata
  • 100g dark chocolate
  • 2 ripe bananas
  • 1½ cup plain flour
  • ¼ cup dark cocoa
  • 1½ teaspoon baking powder
  • ½ teaspoon salt
  • 170g butter, room temperature
  • 1 cup sugar
  • 3 eggs
  • 50g chocolate chips (optional)
  1. Melt the chocolate on a double boiler, then mix it with the two bananas, mashed. Set aside while you prepare the rest of the batter.
  2. Using an electric mixer, cream the butter and sugar together. Add the eggs, one at a time, beating well after each addition. In a separate bowl, sift the flour with the cocoa, salt and baking powder, then incorporate it in the butter mixture, together with the melted chocolate and banana. Once they're all fully incorporated, turn your mixer on high speed and mix for 1 minute. The batter will be fluffy and fragrant.
  3. Spoon the batter into your muffin cases (I ended up with 17 muffins from a batch, but it really depends on the size of the tin I suppose) and bake at 180-190C until they pass the toothpick test. Allow them to cool down completely before serving. Enjoy!

Reteta de azi e magnifica… muffinsii sunt super pufosi si extrem de aromati. Se simte usor aroma bananei, in timp ce ciocolata tinde sa iasa usor in evidenta, insa cele doua arome se completeaza reciproc. E un blat usor umed tocmai datorita bananelor, iar daca nu doriti sa-l coaceti in forme de briose, puteti sa il coaceti fara probleme si sub forma de chec, marind timpul de coacere putin.


  • 100g ciocolata neagra
  • 2 banane mari bine coapte
  • 1 1/2 cup faina
  • 1/4 cup cacao
  • 1 1/2 lingurite praf de copt
  • 1/2 lingurita sare
  • 170g unt la temperatura camerei
  • 1 cup zahar
  • 3 oua
  • 50g cipsuri ciocolata (optional)

* cup = 250ml

  1. Topiti ciocolata pe bain-marie, apoi amestecati-o cu bananele pasate (cu furculita e suficient).
  2. Puneti untul si zaharul in vasul mixerului si mixati pana obtineti o crema. Adaugati ouale, rand pe rand, mixand bine dupa fiecare ou.
  3. Separat, cerneti faina cu cacaoa, praful de copt si sarea. Adaugati-o peste compozitia de oua si unt, mixati usor, apoi puneti si ciocolata. Dati mixerul pe viteza mare si mixati 1-2 minute. Aluatul nu e doar delicios si parfumat, ci si tare matasos si usor de lucrat. Daca doriti, la final incorporati si 50g cipsuri de ciocolata.
  4. Puneti cate o lingura plina de aluat in tavitele de muffins (mie mi-au iesit vreo 17 bucati), apoi coaceti la 180C pana trec testul scobitorii. Pudrati cu zahar si serviti. Pofta buna!!
