Cateodata nu am deloc inspiratie cand vine vorba de deserturi, insa alteori inspiratia ma loveste din plin si ma pun pe treaba. Cam asta s-a intamplat zilele trecute cand mi-am zis ca daca tot e weekend si fac un desert, mai bine sa fac unul al naibii de bun. Vorba aia, nu ca ma laud, dar combinatia asta de ciocolata si fructe de padure e magica si nu am inventat-o eu. Mi-am imaginat centrul ala curgator de fructe de padure si mousse-ul cremos acoperit de glazura lucioasa si papilele mele erau deja in delir.. un delir intens ciocolatos, cum altfel?! Sincer, cred ca ar fi trebuit sa numesc blogul Chocolate Workshop caci am in mare parte deserturi cu ciocolata. Insa nu e vina mea, zau.. pur si simplu ciocolata ma inspira cel mai mult, insa banuiesc ca asta patesc mai toti cofetarii. Nu ai cum sa nu-i iubesti versatilitatea, gustul, aroma, culoarea, e ingredientul perfect in deserturi. Sa va spun un secret insa – nu-mi place sa o mananc in stare pura, in forma de patratele, inimioare etc. Trebuie sa fie un desert, un mousse, o crema, ceva, altfel nu are farmec. 😉
Sa revenim la reteta, insa. E banala, de fapt: un blat simplu, un mousse perfect, un sos de fructe de padure si glazura pe care o folosesc mereu si care nu da gres niciodata, garantat – glazura oglinda.

Componentele desertului sunt, de jos in sus:
1. Blat cu unt
2. Sirop de fructe de padure
3. Mousse de ciocolata
4. Sos de frcute de padure
5. Glazura de ciocolata

Blat cu unt – am folosit aceeasi reteta ca aici Blat de baza. Singura diferenta e ca am intins blatul intr-o tava dreptunghiularasi am copt 15-20 minute la 180C. Odata copt blatul, se taie cercuri exact dupa marimea formelor in care veti face mini tortuletele. Merge insa si un tort mare, de 24-26cm diametru, caz in care coaceti blatul intr-o forma rotunda. Se aseaza blaturile in mini formele de torturi tapetate cu folie de acetat sau hartie de copt.

Primul lucru pe care l-am facut a fost acest sos de fructe de padure caci necesita congelare. Ideea e ca odata congelat poate fi manevrat mai usor decat in stare lichida.
Sos de fructe de padure:

  • 1 cana fructe de padure
  • 1/4 cana zahar
  • 1/4 cana apa
  • 1 lingura zeama de lamaie
  1. Se combina toate ingredientele intr-un vas si se fierbe sosul pentru 10 minute pe foc mic. Se ia de pe foc si se paseaza cu un mixer vertical.
  2. Daca doriti, se da printr-o sita fina pentru a inlatura semintele. Eu am vrut sa pastrez textura si l-am lasat asa.
  3. Se toarna sosul in forme mici de gheata, de preferabil cu margini cat mai rotunde, si se dau la congelator cateva ore.

Sirop de fructe de padure:

  • 1/4 cana fructe de padure
  • 3/4 cana apa
  • 1/4 cana zahar
  • 1 lingurita zeama de lamaie
  1. Se combina toate ingredientele si se fierbe 5 minute.
  2. Se ia de pe foc si se mixeaza cu un mixer vertical.
  3. Se da printr-o sita fina si se lasa sa se racoreasca.
  4. Se insiropeaza blaturile cu acest sirop si se dau la rece pana faceti mousse-ul.

Mousse de ciocolata:

  • 600ml frisca lichida, batuta spuma
  • 300g ciocolata neagra (60% continut de ciocolata cel putin)
  • 6g gelatina + 30ml apa rece
  • 2 oua intregi
  • 60g zahar
  • 1 lingurita vanilie
  • 2 linguri rom
  1. Se hidrateaza gelatina in apa rece pentru 10 minute.
  2. Se topeste ciocolata la microunde sau pe baie de aburi.
  3. Se mixeaza ouale cu zaharul pana devin cremoase apoi se pune bolul pe bain-marie si se continuta mixarea pana amestecul se infierbanta. Se ia de pe foc si cat amestecul e inca fierbinte se adauga gelatina. Se lasa sa se racoreasca 10 minute si se incorporeaza ciocolata topita.
  4. Se da deoparte sa se raceasca apoi se incorporeaza frisca batuta.
  5. Se toarna mousse-ul peste blaturi, umplandu-le doar pe jumatate.
  6. Se aseaza cate un cub de sos de fructe de padure in centrul fiecarei forme si se completeaza forma cu restul de mousse.
  7. Se dau torturile la rece cateva ore, preferabil peste noapte.

A doua zi se scot cu grija din forme si se glazureaza cu glazura oglinda. Decorati dupa plac si serviti cu pofta!

Sometimes I’m totally uninspired when it comes to desserts, but other times I feel like baking the entire day. I am confident in my pastry chef skills and talent though and I always try to push myself above the limits of a simple baked cake. I mean, why do something simple when you can create something amazing, right?! Today’s recipe is delicious and it’s made with a few basic recipes that I always go back to when I don’t want to risk ingredients or waste time. A basic sponge cake, a perfect chocolate mousse, a berry sauce and the most amazing chocolate glaze ever are the only components of this dessert – and oh boy, how great they work together, creating some amazing mini chocolate mousse cakes!!

 
The components of these mini cakes are as follows (bottom to top):
1. Butter sponge cake
2. Berry syrup
3. Chocolate mousse
4. Berry coulis
5. Chocolate glaze.
For the sponge cake, I used the same recipe as here – butter sponge cake. The only difference is that I spread the batter in a large square baking pan and baked it at 180C for 10-15 minutes until golden brown. Once baked, remove the cake from the oven and let it cool down then cut small circles of sponge, making sure they fit your mini cake molds (I used round and heart shaped molds). Place the sponge in your molds and set aside. Feel free to use your favorite recipe of sponge cake.
Berry coulis:
  • 1 cup wild berries
  • 1/4 cup sugar
  • 1/4 cup water
  • 1 tablespoon lemon juice
  1. Combine all the ingredients in a saucepan and cook for 10 minutes on low heat.
  2. Remove from heat and puree with an immersion blender. If you want, you can pass the sauce through a fine sieve. I prefer some texture so I didn’t.
  3. Pour the sauce into ice cube molds and freeze a few hours. Freezing it makes it easier to handle later on.
 
Berry syrup:
  • 1/4 cup berries
  • 3/4 cup water
  • 1/4 cup sugar
  • 1 teaspoon lemon juice
 
  1. Combine all the ingredients in a saucepan and bring to a boil. Cook on low heat for 10 minutes then puree with a blender.
  2. Pass the syrup through a fine sieve to remove all the seeds.
  3. Brush each sponge with this syrup and set the molds aside.
 
Chocolate mousse:
  • 600ml heavy cream, whipped
  • 300g dark chocolate, chopped
  • 6g gelatin + 30ml cold water
  • 2 eggs
  • 60g sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons dark rum
  1. Melt the chocolate and set it aside. Use a microwave or a water bath for this task.
  2. Mix the gelatin with the cold water and let it bloom 10 minutes.
  3. Combine the eggs with the sugar and mix until creamy. Place the bowl on a water bath and keep mixing until stiff and pale in color. This technique cooks the eggs enough to make them safe to eat.
  4. Remove from the water bath and stir in the gelatin, mixing until melted. Add the chocolate and mix well. Let this mixture cool down then fold in the whipped cream, vanilla and dark rum.
  5. Pour the mousse in the cake molds, filling them only half way. Place 1 cube of berry coulis in the centre of each mold and top with the remaining mousse.
  6. Refrigerate a few hours, preferably overnight.
  7. Remove from the molds and glaze with chocolate mirror glaze.
  8. Decorate as you wish and serve chilled.

  1. Foarte foarte frumos ce vad, vreau sa te felicit in primul rand pentru talentul tau care din zi in zi creste tot mai tare. Si apoi pentru poze, intr-un timp foarte scurt ai devenit profesionista ;)!

    sunt super incantata de retetele care le gasesc aici ,am si probat cateva din ele si sunt absolut delicioase. Felicitari pentru arta care o faceti si multumesc ca impartasiti cu noi din experienta dumneavoastra. Am o intrebare :
    am incercat sa intru unde scrie ”blat de baza ” dar imi apare ca imi este refuzata permisiunea si ca imi trebuie o invitatie
    Imi puteti spune va rog ce trebuie sa fac sau ce am facut gresit ?
