{Homemade Marshmallows} – Bezele moi cu nuca de cocos

Fluffy and fragrant, these muffins are a great way to use those egg white leftovers. Kids love them and they are so versatile! Add a touch of food coloring and pour the mixture in various silicone molds to give them a fun shape and you’ve got some fun treats for parties.
Ingredients:
  • 3 egg whites
  • 450g sugar
  • 10 gelatine sheets or 17g granulated gelatine + 140ml water to soak the gelatine
  • 1 tablespoon honey
  • 1 dash of salt
  • 1 teaspoon vanilla extract or any flavour you like
  • 200g desiccated coconut, slightly toasted

Directions:

  1. Line a 30x20cm pan with parchment paper and slightly oil it.
  2. Soak the gelatine in 140ml cold water.
  3. Mix 200ml water with the sugar and honey and bring to a boil. Let it simmer on medium heat until the syrup starts to thicken. It will take 10 to 15 minutes. You will notice that when the syrup is done, if you remove a bit on a spoon it will be thick and really sticky. If you have a candy thermometer, let the syrup simmer until it reaches 127ºC.
  4. While the syrup is cooking, whip the egg whites to stiff peaks.
  5. When the syrup reached the stage we want it to, remove it from direct heat and add the soaked gelatine (the water you soaked it into also). It will foam up a bit, so be careful not to touch the syrup. It’s still very hot.
  6. Using a hand mixer or a stand mixer, slowly start pouring the sugar syrup over the egg whites, mixing all the time to prevent the whites from breaking. Once you add all the syrup, the whole mixture will look like a huge, white soup. Don’t panic!! You’re on the right track! Just be patient and keep mixing for at least 10 more minutes, even 15. The egg whites will transform into this amazing white, shiny foam. Now it’s time to add your favourite flavour: vanilla, almond, mint, strawberry..you name it 😉
  7. Pour the mixture into the pan we prepared earlier and stick it into the fridge for at least 1 hour to allow to set.
  8. Cut the marshmallows into desired shapes, then roll them through toasted coconut flakes.

Reteta apartine lui Nico, de pe un forum culinar. Multumesc, draga mea, pentru reteta si explicatii!
Ingrediente:
  • 3 albusuri
  • 450g zahar
  • 10 foi gelatina/17g gelatina granule + 140ml apa pentru inmuiat gelatina
  • 200ml apa
  • 1 lingura miere de albine/energizant/glucoza lichida
  • 1 praf de sare
  • 1 lingurita extract de vanilie
  • 200g nuca de cocos usor prajita
Instructiuni:
  1. Ungeti o forma de 30x20cm cu putin ulei si dati-o deoparte.
  2. Puneti gelatina la inmuiat in 140ml apa rece.
  3. Puneti la fiert apa (200ml) cu mierea si zaharul la foc mediu. Lasati sa dea in clocot si din momentul in care incepe sa fiarba, mai lasati pe foc pret de vreo 10-15 minute. La mine 12 minute fix au fost suficiente. Trebuie sa obtineti un sirop gros, care se incleie daca il scoateti pe o lingura si il lasati la racit. Aveti grija sa nu lasati siropul prea mult, intrucat riscati sa il caramelizati. Daca aveti termometru de bomboane e si mai simplu. Lasati siropul sa fiarba pana atinge 127ºC.
  4. Cat fierbe siropul, bateti albusurile spuma tare cu un praf de sare.
  5. Cand siropul a ajuns la stadiul de care vorbeam mai devreme, trageti oala de pe foc si adaugati gelatina cu tot cu apa in care s-a inmuiat. Amestecul se va umfla putin, asa ca aveti grija sa nu il atingeti. E extrem de fierbinte!
  6. Incepeti sa mixati din nou albusurile si adaugati siropul clocotit in fir subtire. Odata de ati adaugat tot siropul, amestecul nostru va arata ca o supa :)). Nu va ingrijorati insa, sunteti pe drumul cel bun. Continuati sa mixati inca cel putin 10 minute, ba chiar 15. In tot acest timp, albusurile isi vor mari volumul considerabil (folositi un vas incapator ca sa nu fiti nevoiti sa il schimbati la jumatatea drumului deoarece compozitia dadea pe-afara :P) si se vor transforma intr-o spuma alba, lucioasa.
  7. La final, adaugati vanilia sau orice esenta doriti si turnati in tava unsa cu putin ulei. Eu va recomand sa puneti si hartie de copt si abia apoi sa ungeti cu putin ulei. Nu veti avea nicio problema la scosul din tava.
  8. Dati bezelele la frigider pentru cel putin o ora.
  9. Taiati in formele dorite, apoi tavaliti fiecare marshmallow prin nuca de cocos usor prajita.
