{Vanilla Blueberry Muffins} – Muffins cu afine

One thing I love about these blueberry muffins – they are incredibly easy to make and the ingredients are always on hand. The blueberries are not even compulsory and you can easily replace them with other fruits, such as plums, strawberries, raspberries, apricots or even chocolate chips. It’s a versatile recipe and it always yields great results. It is my “go to” recipe each and every time I need a quick dessert fix.


  • 110ml vegetable oil
  • 150g sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 170g all-purpose flour
  • 35g cornstarch
  • 1 1/2 teaspoons baking powder
  • 1 pinch salt
  • 180g sour cream
  • 100g fresh or frozen blueberries


  1. In a bowl, mix the oil with the sugar then stir in the eggs. Mix with an electric mixer until the mixture triples its volume then stir in the vanilla.
  2. Add the flour, cornstarch, baking powder and salt and mix well.
  3. Incorporate the sour cream and mix well.
  4. Fold in the blueberries then spoon the batter into 12 muffin cups lined with muffin papers.
  5. Bake in the preheated oven at 350F (180C) for 20-25 minutes or until well risen and golden brown.
  6. Allow them to cool in the pan before serving.

Aceasta este reteta de muffins la care ma intorc mereu cand vreau ceva rapid si cu ingrediente la indemana. In plus, ador acest aluat cu smantana pentru ca se pastreaza bine dupa copt, briosele nu se usuca si au gust bun chiar si dupa cateva zile.

Am folosit afine de aceasta data, dar le puteti inlocui cu alte fructe, precum zmeura, capsune, prunce, piersici, caise sau chiar fulgi de ciocolata. E o reteta versatila care iese garantat!


  • 110ml ulei vegetabl
  • 150g zahar
  • 2 oua
  • 1 lingurita extract de vanilie
  • 170g faina alba, cernuta
  • 35g amidon de porumb
  • 1 1/2 lingurite praf de copt
  • 1 praf de sare
  • 180g smantana acra
  • 100g afine proaspete sau congelate

Mod de preparare:

  1. Amestecati zaharul cu uleiul, apoi adaugati ouale. Mixati pana isi tripleaza volumul.
  2. Adaugati vanilia apoi incorporati faina, amidonul, praful de copt si sarea si mixati bine.
  3. Incorporati smantana, apoi adaugati afinele si amestecati usor pentru a nu le rupe in bucati.
  4. Folosing o lingura, turnati aluatul in 12 cupe de muffins. In functie de marimea acestora, s-ar putea sa aveti nevoie de 14-16 cupe, depinde insa si cat de mult le umpleti. Recomand 3/4.
  5. Coaceti la 170C pentru 20-25 minute sau pana sunt crescute frumos si devin aurii.
  6. Lasati-le sa se raceasca in tava inainte de a le servi.
