{Vanilla Cupcakes} – Cupcakes cu vanilie

Cupcakes, cunoscute la noi sub numele de briose adesea, desi nu sunt tocmai niste briose, sunt de fapt niste torturi in miniatura, glazurate cu un mot de crema aromata si de cele mai multe ori presarate cu bombonele colorate. Sunt oarecum asemanatoare cu suratele lor, muffins, insa exista cateva diferente esentiale. In primul rand, difera modul de amestecare a ingredientelor. Pentru muffins, de obicei se amesteca ingredientele uscate intr-un bol, cele ude in alt bol, apoi se uneste compozitia celor doua boluri si se amesteca usor, doar pana la omogenizare. Pentru cupcakes, se incepe cu untul care este mixat bine cu zaharul, apoi se adauga ouale, laptele, faina etc. A doua mare diferenta este compozitia. Muffinsii au de regula in compozitie alune, nuci, fructe, ceea ce le face mai sanatoase si numai bune pentru un mic dejun de exemplu, in timp ce retetele clasice de cupcakes nu includ astfel de ingrediente, cu mentiunea ca, daca doriti, puteti pune orice fructe sau nuci si in cupcakes, fara a le influenta in vreun fel negativ gustul ori aspectul. Cea de-a treia si probabil cea mai vizibila diferenta este glazura. Muffinsii sunt de obicei doar pudrate cu zahar sau au un strat foarte subtire de glazura, in timp ce glazura abudenta de pe cupcakes le scoate pe acestea din urma in evidenta.

Trebuie sa recunosc ca nu prea imi plac muffinsii. Mi se par putin cam seci, tocmai pentru ca eu ador cremele, frisca, ciocolata din abundenta. Si din acest motiv prefer sa fac si sa mananc cupcakes. Sunt adorabile, cum ar zice fiul meu, si taaare delicioase. Aceasta este reteta de cupcakes vanilati pe care o folosesc mereu fara sa ma dezamageasca.

A cupcake, also known as fairy cake, is a small cake, baked in individual small pans, designed to serve one person. It is similar to a muffin, but a cupcake it’s usually decorated with frosting and sprinkles, making it fun not only to bake, but to eat also. Muffins are usually ate plain, dusted with sugar or a very fine layer of icing. There is also a baking technique difference between the two of them. Muffins are made usually by mixing the dry and wet ingredients in separate bowls then fold them together, while cupcakes start by creaming the butter, then add the rest of the ingredients resulting a very soft, creamy batter and a very moist, delicious cupcake. Also, muffins contain usually healthy ingredients, such as grains or fruits, while their sisters, the cupcakes, don’t. But the cupcakes can have any filling you like so it compensates for the lack of fruits or any other fun and healthy ingredients.

I have to admit I’m not a huge fan of muffins. They’re a bit too dry for me. They lack cream and rich fillings which I love. But cupcakes have everything.. from moist batter to rich fillings and luscious frostings. Plus, they are quick and fun to make and they’ll always be a hit for kids. This the vanilla cupcakes recipe I always use and it hasn’t let me down so far.


Ingrediente:
400g faina
300g zahar 
2 lingurite praf de copt
230g unt
250ml lapte
1 lingurita extract de vanilie
4 oua
1 praf de sare

Amestecati faina cu praful de copt, sarea si zaharul in bolul mixerului. Adaugati untul taiat cubulete si mixati pana obtineti o compozitie nisipoasa.
Bateti ouale usor, amestecati-le cu laptele si vanilia si adaugati-le treptat peste faina. Dupa ce ati adaugat toate ingredientele lichide, continuati sa mixati la viteza mare 2-3 minute. Aluatul se va umfla si deschide la culoare putin si va fi atat de aromat si pufos. Puneti aluatul in formele de cupcakes (15 bucati mi-au iesit mie) si coaceti la 180C pana trec testul scobitorii. Vor creste tare frumos.



Ingredients:
400g flour
300g sugar
2 teaspoons baking powder
230g unt
250ml lapte
1 teaspoon vanilla extract
4 eggs
1 dash of salt

In the bowl of your mixer, mix together the flour, salt, sugar and baking powder. Add the butter cut into cubes and mix well until the mixture looks like sand or crumbles. In another bowl, slightly whip the eggs with the milk and vanilla and add it slowly to the flour mixture. It will look a bit weird at first, but don’t worry, keep mixing and adding the milk. After you finished incorporating the egg+milk liquid, with your mixer on high speed, whip the batter for 2-3 minutes. It will change color a bit and become more light and fluffy, very easy to work with and very tasty 😛 Spoon the batter into your muffin pan and bake at 180C until an inserted toothpick comes out clean. Let them cool down while you prepare the buttercream.


Ingrediente swiss meringue buttercream:
120g albusuri (nu stiu exact cate albusuri or fi.. eu am avut la congelator intr-un pahar si le-am cantarit)
140g zahar
300g unt gras, de calitate la temperatura camerei (esential pentru un gust cat mai fin)
1 lingurita esenta vanilie
Intr-un bol rezistent la caldura, puneti albusurile si zaharul, apoi puneti bolul peste o craticioara in care fierbe putina apa, fara ca apa fierbinte sa atinga fundul bolului cu albusuri. Bateti usor cu un tel pana se topeste zaharul si compozitia devine spumoasa. Astfel prelucrate termic ne asiguram ca albusurile nu sunt un pericol pentru sanatate. Din cercetarile mele, ouale se pasteurizeaza mai devreme de punctul de topire al zaharului. Luati bolul de pe aburi si continuati sa mixati pana obtineti o bezea ferma, lucioasa, iar atat bolul cat si bezeaua s-au racit (e important pentru cand vom adauga untul). In acest moment adaugati untul, tot o data, si continuati sa mixati pe viteza cea mai mica a mixerului. La inceput, va parea ca s-a stricat, se va alege apa din unt, va arata ca si cum tocmai ati irosit 300g unt.

Nu disperati!! Continuati sa mixati pe viteza mica, isi va reveni dupa 3-4 minute, transformandu-se intr-o crema fina, pufoasa, aromata, numai buna de ornat cu posul orice va trece prin cap. La final, adaugati vanilia sau orice alta aroma doriti. Tip: daca totusi vi se pare ca crema e inca moale, adaugati 2-3 linguri de zahar pudra cernut.


Puneti crema intr-un pos si ornati cum doriti. Sa aveti pofta!




Swiss meringue buttercream
120g egg whites
140g sugar
300g good quality butter, room temperature

First of all, make sure all your ingredients are at room temperature. Second step is to clean very well the bowl you plan to whip everything, as well as you mixer’s beaters. Any trace of grease won’t allow the egg whites to reach their maximum volume.
To make this buttercream, start by preparing a saucepan with boiling water. In a heatproof bowl, mix together the egg whites and the sugar, then place the bowl over the saucepan, making sure the boiling water doesn’t touches the bottom of the bowl. Using a wisk, keep mixing until the whites start to get foamy and there are no sugar granules left (to check this, just dip your fingers in the mixture and rub them together.. you’ll easily notice any granules left if there are any). This process not only helps the meringue whip better, but also cooks the whites, since the temperature the sugar dissolves is higher than the one the eggs cook.
When the mixture is foamy, remove from the saucepan and start whipping with a mixer until you get a firm, shiny, beautiful meringue and the bowl, as well as the meringue itself are cooled down. This will take a bit of time.. at least 10 minutes, so be patient 😛
Once the meringue is cool, add the butter, all at once and keep whipping at low speed. At some point the buttercream will look soupy, like something went wrong, like you just wasted all that good butter. Don’t panic!! It’s supposed to look like that. Just keep mixing at low speed. After 3-4 minutes you will have the most amazing buttercream you ever tasted. 
You can easily flavor this buttercream with vanilla, you can even add some fruit puree or chocolate or any food coloring you like.
Pour some buttercream in a piping bag, then pipe it on your cupcakes. Aren’t they pretty?!!

  1. Olguta, tocmai am făcut baza de briosa sa zic așa de la cupcakes. Dar nu mi a ieșit deloc bine. Nu e pufoasa și aerata, e destul de densa și S-a lăsat destul de mult. Nu știu unde am greșit? Am copt la 180. Sa fi fost de la ventilație? Sa fi umplut prea mult hârtiuțe și sunt prea grei? Ce părere ai? Nu am făcut nici o rețeta de cupcakes pana acum de care sa fiu 100% mulțumita.
