I consider myself quite adventurous when it comes to baking, but for some reason it took me a while to convince myself to make these carrot muffins. Traditionally, we don’t quite use carrots in desserts. But now that I made them, I can say that I actually like the flavors. The cinnamon is probably the one that stands out the most and the carrots simply blend in. The recipe is simple and quick, the classic mix the dry and wet ingredients recipe.
Ingredients:
- 2 eggs
- 1/2 cup vegetable oil
- 1 cup sugar
- 1/4 cup sour cream
- 2 teaspoons cinnamon powder
- 1 pinch nutmeg
- 1 1/4 cups plain flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 1/2 cups grated carrots
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1 pinch of salt
Directions:
- In a bowl, mix the eggs with the sugar until fluffy then stir in the oil and sour cream.
- In another bowl, combine the flour with the cinnamon, numeg, baking powder, baking soda and salt.
- Mix the flour mixture with the eggs then gently fold in the grated carrots, raisins and walnuts.
- Spoon the batter into your muffin cups lined with baking paper and bake in the preheated oven at 180C for 20-25 minutes or until fluffy and fragrant.
- When done, let them cool in the pan then serve them.
- If you want, you can make a lemon glaze from lemon juice and icing sugar. I prefer them simple.

Ma consider destul de indrazneata cand vine vorba de a incerca retete noi, ciudate uneori, insa tort sau muffins cu morcovi nu am incercat pana acum. Parca aveam asa o strangere de inima cand ma gandeam.. cum?! morcovi in tortul meu?!! Cu toate acestea, trebuie sa recunosc ca m-am inselat. Muffinsii astia au fost chiar buni, iar morcovul nici nu se simte. El oricum e mai dulceag de felul lui si aroma i se disipa in blat, printre aromele de scortisoara si anason stelat. Reteta e simple, bazata pe metoda “se combina ingredientele uscate cu cele ude”, specifica pentru muffins.
Ingrediente:
- 2 oua
- 1/2 cana ulei vegetal
- 1 cana zahar
- 1/4 cana smantana
- 2 lingurite scortisoara
- 1 varf de cutit de nucsoara macinata
- 1 1/4 cani faina alba
- 1 lingurita bicarbonat de sodiu
- 1/2 lingurita praf de copt
- 1 1/2 cani morcov ras
- 1/2 cana stafide
- 1/2 cana nuci tocate
- 1 praf de sare
- Se mixeaza ouale cu zaharul pana isi schimba culoarea, apoi se adauga smantana.
- Intr-un alt bol se amesteca faina cu sarea, scortisoara, nuscoara, bicarbonatul si praful de copt.
- Se incorporeaza ingredientele uscate in cele ude, apoi se incorporeaza usor morcovul ras, stafidele si nucile.
- Se toarna aluatul in tava de muffins tapetata cu hartii de muffins si se coace la 180C aproximatic 20-25 minutes pana cresc frumos si devin aurii.
- Cand sunt gata, se lasa sa se raceasca in tava apoi se servesc. Puteti sa le acoperiti cu o glazura de lamaie cu zahar pudra, eu insa le-am lasat simple de data asta.
