Ok, I admit it.. I’m a chocoholic… I love raw chocolate, but most of all I love it in cakes, cookies, melted, hot chocolate etc. I have yet to try it in savory foods, but I’m not gonna say no when I’ll get the chance to. The idea of these chilli chocolate truffles is haunting me for quite a while, but it got really persistent after watching the movie Chocolat. It tells the story of a young woman, mother of a six-year-old girl, who moves in a small, very conservative French village and opens a chocolate shop. Her chocolate creations quickly begin to change the life of the villagers, wakening hidden passions and desires. The villagers begin to enjoy life, love and friendships once again, while she….. Just watch the movie and you’ll understand. 😉 But get ready to see lots and lots of chocolate.
Back to our chilli chocolate trufflesnow. The recipe is so simple and yet the small truffles look so exquisite, like you’ve worked hours to make them. You can add pretty much any flavours you want, from orange zest to mint or coconut. But today, I infused the heavy cream with chilli flakes to make it not too mild, but not too spicy either.
If you think that chilli and dark chocolate don’t work together, think again. Not only they make a delicious treat, but they are both very healthy. Chocolate is known for increasing the antioxidant levels in blood and for being a mild mood elevator. Plus, I’ve heard that people who eat chocolate live at least one year longer than those who don’t, the explanation being that chocolate can keep your heart healthy and the cocoa butter may raise good cholesterol. Chilli is an important source of vitamins and seems to be a natural pain relief, it can boost your immunity and it has cardiovascular benefits.

The old Mayans believed that chocolate was the food of Gods and they often mixed chocolate with chilli in a drink which was only available to the rich ones. They believed that this drink was able to give strenght in fight and it had aphrodisiac effects. Couples used to drink chocolate at their wedding. Both of these two amazing ingredients complement each other. The chocolate mellows the hotness of the chili, while the heat in the pepper brings out the chocolate flavour. Perfect match!!

{Chilli Chocolate Truffles} – Trufe cu ciocolata si chilli

Print Recipe

Ingredients
 

  • 70 g dark chocolate (good quality)
  • 100 ml heavy cream
  • 15 g butter
  • 1/2 teaspoon chilli flakes (more or less, depending on how spicy you like it :P)
  • 1 dash of salt (salt brings out the chocolate flavour..always add salt to any chocolate recipe ;))
  • 100 g dark cocoa or 200g dark chocolate melted for coating the final truffles (I used cocoa, because this way they have a bit of an unfinished touch which I love)

Instructions

  • First of all, measure 100ml of heavy cream and bring to a boil. Remove from heat and add the salt and chilli flakes. Set aside to infuse while you prepare the chocolate.
  • Break the chocolate into smaller pieces and place it into a heatproof bowl on a double boiler (take a saucepan, add a bit of water, bring to a boil, lower the heat, then place the bowl of chocolate on top while the water is simmering, making sure the hot water doesn’t touch the bottom of the bowl).
  • Once the chocolate has melted, strain the spicy heavy cream into your bowl and, using a spatula, start mixing from the middle of your bowl, slowly, until the mixture is smooth and creamy. Add the butter, mix until it completely melts, then refrigerate for at least 4 hours.
  • After 4 hours, using a small spoon, take a bit of chocolate and shape it into a ball, then roll it into the cocoa. Warning!! This part is really really messy 😛 The chocolate melts on your fingers, then cocoa coats not only the truffles but your sticky hands as well :)) But it’s fun… and yummy!!

Ciocolata e una dinre preferatele mele in materie de dulciuri, insa nu am gustat pana acum ciocolata cu chilli si trebuie sa recunosc ca m-a impresionat. Putin amara, putin dulce, putin iute.. suficient din toate incat sa fie o experienta culinara extraordinara.
Idea acestor trufe ma cam bantuia de ceva timp, insa abia dupa ce am vizionat acest film, Chocolat (gasiti trailerul mai jos in aceasta postare) mi-am zis ca trebuie neaparat sa le fac. Filmul spune povestea unei femei, mama a unei fetite de sase ani, care se muta intr-un mic orasel francez, foarte traditionalist, unde deschide o ciocolaterie. Creatiile ei dulci, ciocolatoase incep usor usor sa cucereasca inimile locuitorilor si sa-i ajute sa redescopere viata, iubirea si prietenia. Insa mai bine va las sa vedeti filmul daca nu l-ati vazut pana acum si veti intelege mai multe. Fiti insa pregatiti sa vedeti ciocolata…muuuulta ciocolata. 😀
Trufele in general se fac dupa retete usoare, precum aceasta, insa sunt atat de delicioase si delicate, incat pare ca ai muncit ore sa le faci. Prin urmare, sunt mereu o buna modalitate de a impresiona musafirii. In plus, puteti adauga orice aroma doriti, de la coaja de portocale, pana la menta ori nuca de cocos. Insa astazi, eu m-am oprit la fulgi de chilli.
De altfel, ciocolata si chilli reprezinta o combinatie ce vine pe filiera maiasa. Vechii maiasi credeau ca ciocolata e mancarea zeilor si obisnuiau sa faca o bautura de ciocolata care era servita doar celor mai bogati. Adesea, adaugau chilli in acea bautura pentru a scoate in evidenta aroma de ciocolata. Ei credeau ca aceasta bautura te facea mai puternic in lupta, mai rezistent la oboseala si, in plus, era si un bun afrodiziac. Iata suficiente motive sa incercam macar o data ciocolata asta condimentata 😉

Ingrediente:

  • 170g ciocolata neagra de buna calitate
  • 100ml smantana lichida pentru frisca
  • 30g unt
  • 1/2 lingurita fulgi de chilli
  • 1 praf de sare (sarea scoate in evidenta gustul ciocolatei)
  • 100g cacao pentru a acoperi trufele sau 200g ciocolata topita (eu prefer cacaoa)

Mod de preparare:

  1. In primul rand, incalziti aproape de punctul de fierbere smantana, apoi adaugati sarea si fulgii de chilli. Dati deoparte si lasati sa infuzeze pana topiti ciocolata.
  2. Rupeti ciocolata bucatele, puneti-o intr-un bol rezistent la caldura, apoi puneti bolul deasupra unui vas cu apa care fierbe, avand grija ca apa fierbinte sa nu atinga fundul bolului. Cand ciocolata s-a topit complet, treceti smantana printr-o sita pentru a inlatura fulgii de chilli, apoi adaugati-o peste ciocolata si amestecati cu o spatula pana obtineti o crema fina. Adaugati si untul si amestecati pana acesta este topit complet. Acoperiti cu o folie si dati la rece pentru cel putin patru ore.
  3. Dupa patru ore, scoateti din frigider, luati cate o lingurita de compozitie, dati-i o forma rotunda folosindu-va de palme, apoi treceti fiecare biluta de ciocolata prin cacao. Daca folositi ciocolata, topiti-o pe bain-marie, apoi treceti fiecare biluta prin ciocolata, dupa care puneti-le pe o foaie de copt si dati la rece pentru ca ciocolata sa se intareasca. Ce va mai ramane de facut?!! Bucurati-va de minunatiile astea mici si putin condimentate. 😉

    Buna Olguta,
    Iti urmaresc blogul de ceva timp si chiar am incercat cateva retete (toate au iesit foarte bine), dar abia acum mi-am facut curaj sa iti scriu.
    Vreau sa te felicit pentru acest minunat blog. Iti multumesc pentru ca esti sursa mea de inspiratie in materie de dulce.
