{Lemon Coconut Cookies} – Fursecuri cu nuca de cocos si lamaie
Serves:: 2 dozen
  • 210g all-purpose flour
  • 1 pinch salt
  • ½ teaspoon baking powder
  • 90g shredded coconut
  • 110g butter, softened
  • 40g powdered sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 60g white chocolate, melted
  1. Preheat your oven to 350F (180C).
  2. Line two baking sheets with baking paper.
  3. Combine all the ingredients in a food processor and pulse until well mixed.
  4. Transfer the dough on a floured working surface and knead until it comes together.
  5. Roll the dough into a thin sheet (3-4mm) then cut small rounds with a cookie cutter.
  6. Place the cookies on your prepared baking sheets.
  7. Bake for 15 minutes until the edges begin to turn golden brown.
  8. Remove the pans from the oven and allow the cookies to cool completely.
  9. Top each cookie with a dollop of melted chocolate and decorate with lemon zest.
Depending on humidity, the dough might need 1-2 tablespoons of liquid to come together. Use either water or milk or even lemon juice if you think you might like a tangy taste.
