{Rolo Cookies} - Fursecuri cu ciocolata
Serves:: 2 dozen
  • 115g butter, softened
  • 280g brown sugar
  • 2 eggs
  • 55g dark cocoa powder
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 260g all-purpose flour
  • Rolo candies as needed
  1. Sift the flour with baking powder, salt and cocoa powder.
  2. In a bowl, mix the butter with sugar until creamy and pale in color.
  3. Stir in the eggs, one by one, then add the flour and mix until well incorporated.
  4. Place the dough in the fridge for 2 hours.
  5. Preheat your oven to 350F - 175C and line two baking sheets with baking paper.
  6. Remove the dough from the fridge then using a spoon, take spoonfuls of dough and shape them into a ball.
  7. Flatten the ball and place one Rolo candy in the center. Gather the edges of the dough over the Rolo and shape into a ball again.
  8. Place the cookies on your baking sheets and bake in the oven for 15-20 minutes. I baked mine for about 17 minutes, but check them after 10 minutes. They are done when they're crusty, but not hard.
  9. Remove them from the oven and let them cool slightly before serving.
  10. Considering the Rolo center, they are better served warm, but they are delicious chilled as well.
