{Citrus Wafer Cookies}
Serves:: 2 dozen
  • 135g butter, softened
  • 100g white sugar
  • 1 teaspoon orange zest
  • 1 teaspoon lemon zest
  • 1 egg
  • 1 tablespoon whole milk
  • 1 tablespoon lemon juice
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 200g all-purpose flour
  • Orange peel to decorate
  1. Preheat your oven to 350F - 180C and line two baking sheets with baking paper.
  2. Sift the flour with baking soda and salt.
  3. Combine the butter and sugar in a bowl and mix until creamy, at least 3 minutes.
  4. Stir in the orange zest, lemon zest and egg and mix well.
  5. Add the milk and lemon juice then fold in the flour.
  6. Spoon the batter into a pastry bag fitted with a round nozzle then pipe small cookies on your prepared baking sheets. Decorate each cookie with orange peel.
  7. Bake in the oven for 15-20 minutes or until the edges begin to turn golden brown.
  8. Let them cool in the pan then store in an airtight container.
