{Carob Truffles}
  • 300g dates, pitted
  • 2 tablespoons mixed seeds (chia seeds, sunflower seeds, flax seeds or any other seeds you like)
  • 2 tablespoons agave syrup
  • ½ teaspoon vanilla extract
  • 2 tablespoons coconut oil, melted
  • 4 tablespoons carob powder
  • 1 pinch salt
  1. Place the dates in a bowl and cover them with hot water. Let them soak up for 2 minutes then drain well and place them in a food processor.
  2. Add the mixed seeds, agave syrup, vanilla extract, coconut oil, a pinch of salt and carob powder and pulse until a paste forms.
  3. Form small balls of this mixture and roll each of them through carob powder or shredded coconut if you prefer.
