{Coconut Brownies} - Brownies cu nuca de cocos
Serves:: 12-16 squares
Brownie layer:
  • 200g dark chocolate, chopped
  • 200g butter
  • 3 eggs
  • 200g white sugar
  • 80g all-purpose flour
  • 50g cocoa powder
  • ½ teaspoon salt
Coconut layer:
  • 150g shredded coconut (unsweetned)
  • 250g sweetened condensed milk
  • 2 eggs
  • 1 teaspoon vanilla extract
Brownie layer:
  1. Pre-heat your oven to 350F and line a small square pan with baking paper.
  2. Combine the eggs and sugar in the bowl of your mixer and mix for 5 minutes until thickened, pale and fluffy.
  3. In the meantime, melt the chocolate and butter in a bowl over a hot water bath.
  4. Stir the melted chocolate into the egg mixture then fold in the flour, cocoa powder and salt.
  5. Pour the batter in the prepared pan and bake in the oven for 10 minutes.
Coconut layer:
  1. Mix all the ingredients in a bowl.
  2. Spread this mixture over the brownie layer and continue baking for 15 additional minutes.
  3. When done, allow to cool completely then cut into small squares and serve.
