{Vegan Coconut Loaf Cake}
Serves:: 1 loaf cake
Loaf cake:
  • 60g coconut flakes
  • 280g all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 150g white sugar
  • 200ml coconut milk
  • 80ml vegetable oil
  • 1 teaspoon apple cider vinegar
  • ½ teaspoon vanilla extract
  • 2 tablespoons coconut milk
  • 100g powdered sugar
  • 20g coconut flakes, roasted
Loaf cake:
  1. Combine the coconut flakes and the remaining dry ingredients in a bowl.
  2. Add the wet ingredients and give it a quick mix just until incorporated.
  3. Spoon the batter in a loaf cake pan lined with baking paper.
  4. Bake the cake in the preheated oven at 350F for 35 minutes or until it passes the toothpick test.
  5. Allow the cake to cool in the pan then transfer on a platter.
  1. Mix the coconut milk and sugar in a bowl.
  2. Drizzle the cake with the glaze and top right away with coconut flakes.
  3. Allow to set and serve right away.
