{Sacher Loaf Cake}
  • 200g butter, softened
  • 150g powdered sugar, sifted
  • 4 eggs, room temperature
  • 175g all-purpose flour
  • 5g baking powder
  • 45g cocoa powder (Dutch processed)
  • 2g salt
  • 150g dark chocolate chips*
  • 80g dry apricots, diced
  1. Combine the butter and sugar in a bowl and mix for a few minutes until light and fluffy.
  2. Stir in the eggs, one by one, mixing well after each addition.
  3. Sift the flour, baking powder, cocoa powder and salt together then incorporate this mix into the batter.
  4. Finally, on low speed, add the chocolate and apricots and mix to combine.
  5. Spoon the batter in a loaf pan that has been greased and lined with baking paper beforehand.
  6. Bake in the preheated oven at 165C for about 1 hour or until a toothpick inserted in the center of the cake comes out clean.
  7. Allow to cool down in the pan then slice and serve.
*Use either chocolate chips or a tablet that you simply chop to small size bits.
