Oatmeal Fruit Crumble

Filling:
  • 600g fruits (peaches and rhubarb in my case)
  • 60g honey
  • 20g brown sugar
  • 15g cornstarch
  • 2g lemon zest
Topping:
  • 60g brown sugar
  • 100g whole wheat flour
  • 50g oatmeal
  • 1g salt
  • 30g almond slices
  • 2g lemon zest
  • 80g butter, melted
Directions:
Filling:
  1. Combine all the ingredients in a bowl and mix them well.
  2. Transfer in a deep dish baking pan and place aside.
Topping:
  1. Combine the dry ingredients in a bowl and mix them well.
  2. Add the melted butter and give it a good stir.
  3. Spoon the topping over the fruits.
  4. Bake in the preheated oven at 180C for 25-30 minutes or until golden brown and crispy on top.
  5. Cool down slightly.
  6. Enjoy with a dollop of Greek yogurt and a drizzle of honey.
