{Easy Lemon Cake} – Tort rapid cu lamaie
A delicious and easy to make lemon cake that makes an excellent afternoon treat with a cup of tea.
Serves:: 4-6
Lemon cake
  • 120g butter, softened
  • 120g white sugar
  • 1 egg
  • zest from 1 lemon
  • 150g all-purpose flour
  • ½ teapsoon baking powder
  • 1 pinch salt
  • 2 tablespoons milk
Lemon glaze
  • 125g powdered sugar
  • 2 tablespoons lemon juice
  1. To make the cake, combine all the ingredients in a food processor and pulse until the batter is smooth.
  2. Spoon the batter into a round cake pan (18cm diameter) and bake in the preheated oven at 350F for 20-30 minutes or until well risen and golden brown.
  3. To check for doneness, insert a toothpick in the center of the cake. If the cake is done, the toothpick will come out clean, but if the cake is not baked enough, there will still be traces of batter on the toothpick.
  4. Remove the cake from the oven and let it cool down in the pan.
  5. Transfer the cake on a platter.
  6. For the glaze, combine the sugar and lemon juice and mix well. if the glaze is too thick, add more lemon juice and if it's too thin, add more powdered sugar.
  7. Drizzle the glaze over the chilled cake and let it set in the fridge for 10 minutes.
  8. Slice the cake and serve.
