I’m definitely a summer girl! Not because I was born in August, but because I hate the cold and never been a huge fan of snow either. I very much prefer the heat and not seeing the sun more than two days in a row gives me a weird feeling. So this time of the year is lovely for me, despite being so hot in the kitchen when I bake. And how can I not love the warm weather and the abundance of plums, grapes, blueberries and even some late summer strawberries?! Not to count the fresh, green apples and pears. It’s amazing and going to the market every day is a pleasure. It feels like recharging your batteries – all these fruits on display and you get to choose which ones you want. Yes, I am a summer girl!
It’s not the first time making cobbler, but it’s the first time that it turns out so good. The crisp and golden topping, the juicy and flavorful fruits – it’s summer and autumn flavors gathered into the same dessert. Did I mention the part where you top this plum cobbler with a good dollop of ice cream yet? Yup, you do! The slightly warm cobbler will melt the ice cream while you dig in spoon after spoon. I can honestly say that this is one of the easiest and most delicious desserts I have ever made! And I will be making again and again!
Ingredients:
Filling:
- 500g pitted plums, cut in quarters
- 200g blueberries
- 2 tablespoons lemon juice
- 2 tablespoons cornstarch
- 2 linguri zahar
Topping:
- 75g cold butter, cubed
- 150g plain flour
- 50g sugar
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon cinnamon powder
- 1 pinch salt
- 1 egg
- 130ml buttermilk*
Directions:
- For the filling, combine all the ingredients in a deep baking pan and mix with your fingers to evenly coat the fruits.
- For the topping, combine all the ingredients in a food processor and pulse until smooth and well mixed.
- Spoon the topping over the fruits and bake in the preheated oven at 350F (180C) for 30-40 minutes or until the top is golden brown. You can use a big deep baking pan or more individual pans like I did.
- Serve the cobbler slightly warm, topped with ice cream.
* To make buttermilk at home, combine 1 cup of milk with 2 teaspoons lemon juice and let it sit for 5 minutes. It will curdle slightly and thicken.

Sunt nascuta vara, insa nu acesta e motivul pentru care iubesc perioada asta a anului. Urasc frigul si zapada, e drept, si tare mi-as dori sa nu trebuiasca sa le infrunt iarna de iarna, insa iubesc vara pentru abundenta asta de fructe – afine, capsune, pere, struguri, prune – tot ce-ti doreste inimioara gasesti acum la piata si tu trebuie doar sa iti alegi ce-ti place. Super! Sa o tina tot asa!
Reteta de azi e super rapida, dar atat de delicioasa! Am mai facut cobbler de cateva ori pana acum, dar parca niciodata nu a iesit atat de bun. Crusta aromata, interiorul zemos – ce sa mai, un adevarat desert de vara daca il servesti cu inghetata! Va spun sincer ca dupa rapida sedinta foto am dat gata un bol de cobbler.. si inca unul a doua zi dimineata. Ca doar ziua buna se cunoaste de dimineata, nu?!!?!
Ingrediente:
Umplutura:
- 500g prune fara samburi, feliate
- 200g afine proaspete sau congelate
- 2 linguri suc de lamaie
- 2 linguri zahar
- 2 linguri amidon de porumb
Topping:
- 75g unt rece, taiat in cuburi
- 150g faina alba
- 50g zahar
- 1 lingurita praf de copt
- 1/2 lingurita extract de vanilie
- 1/4 lingurita scortisoara pudra
- 1 ou
- 130ml lapte batut rece
- 1 praf de sare
Mod de preparare:
- Amestecati toate ingredientele pentru umplutura intr-un bol. Transferati amestecul intr-o tava de ceramica sau yena adanca ori mai multe tavi mai mici, individuale, cum am facut eu. Dati deoparte.
- Pentru topping, combinati toate ingredientele in vasul robotului de bucatarie si pulsati pana obtineti un aluat omogen.
- Turnati aluatul peste fructe si coaceti la 180C pentru 30-40 minute sau pana toppingul e auriu si fructele si-au lasat zeama.
- Serviti caldut cu inghetata deasupra!
