Mix the mashed banana, vanilla and lemon juice in a bowl.
Sift the flour, baking powder, baking soda and salt in another bowl.
Combine the butter and the two types of sugar in a bowl and mix them for a few minutes until pale and light.
Stir in the banana puree, then add the heavy cream, followed by the egg. Mix well.
Stir in the dry ingredients and mix briefly just until combined.
Spoon the batter in a baking tray lined with muffin papers.
Top each muffin with banana slices and bake in the preheated oven at 350F - 180C for 15-20 minutes or until golden brown.
Notes
Feel free to level up these muffins with the addition of chopped walnuts or pecan nuts! A frosting can easily be added to turn these into cupcakes, but for my taste, they were perfect just the way they are!
