Combine all the ingredients in a food processor and pulse until well mixed.
Transfer the dough on a floured working surface and knead until it comes together.
Roll the dough into a thin sheet (3-4mm) then cut small rounds with a cookie cutter.
Place the cookies on your prepared baking sheets.
Bake for 15 minutes until the edges begin to turn golden brown.
Remove the pans from the oven and allow the cookies to cool completely.
Top each cookie with a dollop of melted chocolate and decorate with lemon zest.
Notes
Depending on humidity, the dough might need 1-2 tablespoons of liquid to come together. Use either water or milk or even lemon juice if you think you might like a tangy taste.You can use other flavors if you want: orange, lavender, ginger etc
