Sometimes I program my posts and which recipe to bake for my blog, other times I just get an idea and feel like pursuing it without delay. The same happened with these coconut lemon cookies. I love coconut and lemon and I truly thought these two would work great together. And they sure did, creating a delicate, fragrant cookie. I’m thinking to replace the lemon with lime next time for an even more delicious and slightly more tropical result. Although I think orange or bergamot would yield delicious cookies as well.

The cookies are crumbly, but they hold their shape well and the lemon zest gives them a nice, fragrant kick. The white chocolate is like the cherry on top with its rich taste and it is the one that brings the coconut and lemon together into a one pretty and delicious cookie.

Serves:: 2 dozen
Ingredients:
  • 210g all-purpose flour
  • 1 pinch salt
  • ½ teaspoon baking powder
  • 90g shredded coconut
  • 110g butter, softened
  • 40g powdered sugar
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 60g white chocolate, melted
Directions:
  1. Preheat your oven to 350F (180C).
  2. Line two baking sheets with baking paper.
  3. Combine all the ingredients in a food processor and pulse until well mixed.
  4. Transfer the dough on a floured working surface and knead until it comes together.
  5. Roll the dough into a thin sheet (3-4mm) then cut small rounds with a cookie cutter.
  6. Place the cookies on your prepared baking sheets.
  7. Bake for 15 minutes until the edges begin to turn golden brown.
  8. Remove the pans from the oven and allow the cookies to cool completely.
  9. Top each cookie with a dollop of melted chocolate and decorate with lemon zest.
Notes
Depending on humidity, the dough might need 1-2 tablespoons of liquid to come together. Use either water or milk or even lemon juice if you think you might like a tangy taste.

Cateodata imi programez postarile si retetele, alteori se intampla sa imi vina o idee si sa o si pun in aplicare. Exact asta s-a intampla cu aceste fursecuri si recunosc ca mie mi-a placut rezultatul final. Ador nuca de cocos si lamaia, insa data viitoare voi incerca si o varianta cu lime sau portocala. Fursecurile sunt aromate, fragede si absolut delicioase!

Ingrediente:

  • 210g faina alba
  • 1 praf de sare
  • ½ lingurita praf de copt
  • 90g nuca de cocos razuita
  • 110g unt moale
  • 40g zahar pudra
  • 1 lingura coaja de lamaie
  • 1 lingurita extract de vanilie
  • 60g ciocolata alba, topita

Mod de preparare:

  1. Incalziti cuptorul la 180C.
  2. Combinati toate ingredientele, exceptand ciocolata, in vasul unui robot de bucatarie.
  3. Mixati pana obtineti un aluat omogen apoi transferati aluatul pe masa de lucru.
  4. Intindeti aluatul intr-o foaie subtire (3-4mm grosime) apoi taiati fursecuri folosind o forma rotunda.
  5. Asezati fursecurile pe doua tavi tapetate cu hartie de copt si coaceti la 180C pentru 15 minute sau pana marginile devin usor aurii.
  6. Lasati fursecurile sa se racoreasca in tava apoi acoperiti fiecare fursec cu ciocolata topita si decorati cu fasii de coaja de lamaie.

Nota: In functie de umiditate, insa si alti factori, aluatul s-ar putea sa necesite 1-2 linguri de lichid pentru a se lega. Folositi apa, lapte sau chiar zeama de lamaie daca va place gustul acrisor.
