{White Chocolate and Caramel Cheesecake} – Cheesecake cu ciocolata alba si sos caramel

After a chocolate mousse cheesecakedouble chocolate cheesecake and coffee cheesecake, here is a new cheesecake recipe – white chocolate cheesecake with amaretto caramel sauce. A creamy white chocolate cheesecake with a boozy caramel sauce – so delicious and rich! What I love about cheesecakes it’s their versatility. You can make them usijg fruits, chocolate, nuts, dried fruits, pretty much anything your heart desires, knowing that you will have a delicious dessert every single time. In addition to these, they are easy to make, you don’t need to be an expert in the kitchen to enjoy a slice of cheesecake!

For this particular recipe I chose the delicate white chocolate, but if that was not enough, I paired with with a silky caramel sauce, flavored with Amaretto. It’s decadence in every bite!

{White Chocolate Cheesecake with Amaretto Caramel Sauce}
  • 150g graham crackers
  • 20g almonds
  • 60g butter, melted
  • 150ml heavy cream
  • 100g white chocolate, chopped
  • 700g cream cheese
  • 100g sugar
  • Seeds from 1 vanilla pod
  • 4 eggs
  • 1 pinch salt
  • 1 tablespoon cornstarch
Amaretto caramel sauce:
  • 200g sugar
  • 20g glucose
  • 50ml water
  • 300ml heavy cream, heated
  • 1 pinch salt
  • ¼ cup Amaretto
  1. Ground the crackers and almonds in a food processor.
  2. Add the butter and mix well until well combined. Transfer the mixture into a round cake pan lined with parchment paper.
  3. Press it well on the bottom of the pan and place aside until the filling is ready.
  1. Bring the heavy cream to the boiling point in a saucepan then remove from heat and stir in the chocolate. Mix until melted then pour the mixture into a bowl and add the rest of the ingredients.
  2. Mix well with a whisk then pour the filling over the crust.
  3. Bake the cheesecake in the preheated oven at 160C for 1 hour.
Amaretto caramel sauce:
  1. Bring the cream to the boiling point in a saucepan.
  2. Combine the sugar, glucose and water in a heavy saucepan and bring to a boil over medium flame.
  3. Cook until it begins to caramelize and turn into an amber color.
  4. Pour in the heavy cream, add the salt and mix until the sugar is melted.
  5. Cook the sauce for 2-3 more minutes until smooth then remove from heat. Let it cool down then add the Amaretto.
  6. Serve the cheesecake topped with Amaretto caramel sauce.
The caramel sauce recipe yields more than enough caramel for this cheesecake and other desserts too.



Cheesecake-ul cremos si sosul onctuos sunt o combinatie minunata care merita incercata daca sunteti fani ai prajiturilor cu branza. Nu o fi un desert pentru dieta, dar in mod clar e un desert elegant, absolut delicious! E a nu stiu cata reteta de cheesecake pe blog si trebuie sa recunosc ca imi plac prajiturile de genul acesta pentru ca sunt atat de versatile. Odata ce ai gasit o reteta de baza buna poti jongla cu atat de multe alte componente astfel incat de fiecare data obtii un cheesecake diferit. Fructe, ciocolata, cafea, sosuri, condimente de tot felul – doar imaginati ta este limita!


  • 150g biscuiti integrali
  • 20g migdale
  • 60g unt topit
  1. Combinati biscuitii si migdalele intr-un robot de bucatarie si procesati pana se transforma in pudra.
  2. Adaugati untul si mixati bine apoi transferati compozitia intr-o forma rotunda de tort si tasati biscuitii pe fundul formei. Dati deoparte.

Umplutura de branza:

  • 150ml frisca lichida
  • 100g ciocolata alba
  • 100g zahar
  • 700g crema de branza
  • Semintele de la o pastaie de vanilie
  • 4 oua
  • 1 praf de sare
  • 1 lingur amidon
  1. Incalziti frisca pana la punctul de fierbere (la foc mic sau la microunde), apoi adaugati ciocolata si amestecati pana se topeste.
  2. Combinati crema de branza, zaharul, ouale, semintele de vanilie, sarea si amidonul intr-un bol si mixati bine apoi adaugati compozitia de ciocolata.
  3. Amestecati si turnati umplutura peste crusta.
  4. Coaceti cheesecake-ul in cuptorul preincalzit la 160C pentru 1 ora. Lasati cheeseca-ul sa se raceasca in tava apoi cu grija transferati-l pe un platou. Dati deoparte.

Sos caramel cu Amaretto:

  • 200g zahar
  • 20g glucoza lichida
  • 50ml apa rece
  • 300ml frisca lichida fierbinte
  • 1 praf de sare
  • 1/4 cana Amaretto
  1. Amestecati zaharul, glucoza si apa intr-un vas cu fund dublu si fierbeti la foc mediu pana se transforma intr-un sirop gros, apoi se caramelizeaza.
  2. Cand zaharul are o culoare caramizie (aveti grija caci se arde foarte repede si odata ars devine amarui), adaugati frisca lichida si sarea si amestecati pana se topeste zaharul.
  3. Fierbeti 5 minute apoi luati de pe foc si lasati sa se raceasca.
  4. Adaugati Amaretto apoi serviti cheesecake-ul cu sos din abundenta.

  2. I Printed your recipe for White Chocolate Cheesecake with Amaretto Sauce and one of the ingredients I am not familiar with is in the carmel sauce: 20g glucose. What is this?

    • You can replace it with honey or just skip adding it.
      Glucose improves the texture but it’s not compulsory. Honey has a similar molecular structure to glucose though and a very similar role.
